Layered Peach Yogurt Parfait

Peach season is upon and I have the perfect way to use them in this heatwave, besides eating them whole that is. Who can resist biting into a juicy peach.

This Peach Yogurt Parfait takes minutes to whip up, especially if you already have a batch of my toasted muesli on hand and it makes an awesome quick and easy breakfast or snack.

Peach Yogurt Parfait with Toasted Muesli

Ingredients:

For the Parfait

  • Toasted Muesli (find the recipe here)
  • No Sugar Added Yogurt of choice
  • Raw Peaches n' Cream Puree (recipe below)
  • Raw Honey or Brown Rice Malt Syrup
  • Peach Slices
  • Slivered Almonds for topping

For the Peaches & Cream Purée

  • 1 Ripe Peach, peeled and cubed
  • Pinch Bourboun Vanilla Powder
  • Raw Honey or Brown Rice Malt Syrup, to taste (optional)
  • Handful of Slivered Almonds or Cashews, preferably soaked overnight

Method:

  1. Prepare the peaches n' cream purée by adding all ingredients to a high speed blender and puréeing until smooth and creamy. Add honey or brown rice malt syrup to taste and depending on how sweet you like it.
  2. Assemble the parfait by layering the yogurt, peaches n' cream purée and muesli.
  3. For the final layer, top with yogurt and peaches n' cream purée and swirl them together.
  4. Top with peach slices, some toasted muesli, some slivered almonds and a drizzle of raw honey or brown rice malt syrup if desired.
